Can’t fight the BEET! Welcome to a NEW Month!

My focus this month is to take my time to find excitement and joy in my day to day and not rush to the end! We are all climbing out of the corona bubble together so let’s spread the cheer and find gratitude in our small daily moments (since we can’t paint the big picture currently). Make small plans even if they are alone, find enjoyment in peaceful walks, new books, couch dates, and body work (at home yoga sessions, make your own face masks, look up partner yoga moves). Bag of Spring Mix, Chopped Fennel, Shallots, + Leeks, Sliced Beets, Candied Pecans (homemade!), Olive Oil/Balsamic Dressing with Fresh Mint on Top.

Beet Smoothie

Refreshing: Colorful: Super Powerful

1 Cooked Beet: Fresh Ginger: 1 Handful Frozen Berries. 1 Frozen Banana. Juice of 1 orange (1/2 Cup Orange Juice). 1/4 Cup Water (more or less). Dash of Honey (optional). Blend Well! Serve Cold.
